This recipe is super easy and cheap to make so ideal for a tasty midweek meal but would also taste great with all the trimmings on the big day!
Ingredients to serve 2:
- 1 large or 2 small heads of cauliflower
- Flour for dusting
- Plant based milk for dipping
- Sage and onion stuffing mix (vegan friendly obviously)
Cut a cauliflower into thick slices, be warned too thin and it will just fall apart!
Line up 3 shallow dishes for flour, milk and stuffing mix.
Carefully dip cauliflower in flour followed by plant based milk then finally the stuffing crumbs.
Bake in oven for around 20 mins, carefully turning halfway through.
Now how easy is that?!?
I served mine up with roasted sweet potato wedges, some greens and lots of gravy.
Try roasting sweet potato wedges with fresh rosemary and sprinkle of cinnamon for a festive twist.
